VUNDER BLUE POTATO FILLING
6 potato cups
3 tablespoon butter
1 cup mashed blue cheese
1 tablespoon cream
1 tablespoon tomato sauce or catsup
1/2 teaspoon chopped fresh basil
Prepare potato cups, reserving mashed potato pulp. Melt butter in a pan (or microwave on HIGH 30 seconds). Add remaining ingredients and beat well. Spoon into shells and reheat.
