Title:

ORANGE GINGER CHICKEN

Ingredients:

2 pounds skinless chicken pieces
1 cup orange juice
1 tablespoon soy sauce
3 tablespoons sour apple jelly, or other jelly
1/4 cup sliced ginger
1 tablespoon Dijon mustard
salt and pepper to taste
2 bell peppers, sliced

Instructions:

Spray a non-stick skillet with cooking spray and heat over medium-high heat until hot. Add chicken and brown on all sides. Remove chicken from skillet and add all other ingredients except the bell pepper. Bring to a boil, then return chicken to the skillet. Reduce heat, cover and simmer chicken for 15 minutes. Add bell pepper and continue simmering for 5 more minutes. Remove chicken and pepper to a platter. Thicken sauce, if desired, with a little cornstarch dissolved in a small quantity of water. Pour sauce over Chicken and serve.
